Gina: Hi everyone, I'm Gina.
Lucia: And I'm Lucia!
Gina: And welcome to Culture Class Essential Spanish Vocabulary, Lesson 4! In this lesson you'll learn five essential words related to food and drink. These are five popular Peruvian home-cooked meals, hand picked. You can find a complete list of vocabulary at SpanishPod101.com.
FIVE KEY VOCABULARY ITEMS
Gina: Lucia, what’s our first meal?
Lucia: arroz con pollo
Gina: “rice with chicken”

Gina:
Rice and chicken is a well-known meal all over Latin America. In Peru, it’s cooked all together in a big pot and mixed with small square carrots and peas. It can be yellow or green depending on the spices used, and it’s usually accompanied with a side dish of potatoes with a cheese sauce.
Gina: Now let's hear an example sentence.
Lucia: [normal] El arroz con pollo es el plato de casa mas común.
Gina: “Chicken and rice is the most common home-cooked meal.”

In Peruvian homes it’s tradition to eat rice and lentils every Monday because of an old saying that goes, “Eating lentils at the beginning of the week will give you good fortune and luck.” This tradition is called “Mondays of lentils”.

Gina: “Sometimes, rice with lentils is accompanied by beefsteak or ground beef.”

Fried rice is part of Chinese-Peruvian cuisine, nowadays popular in homes. It’s a mix of fried rice with vegetables, egg, meat, soy sauce, and oil. In Peruvian homes, it usually has hot dog slices instead of meat or sometimes both.
Gina: Now let's hear an example sentence.
Lucia: [normal] Es muy popular que se prepare arroz chaufa de hot dog en casa.
Gina: “It’s very popular to prepare fried rice with hot dogs at home.”
Lucia: [slow] Es muy popular que se prepare arroz chaufa de hot dog en casa.

Lucia: ají de gallina
Gina: “shredded chicken in a creamy, spicy yellow sauce”

This dish is shredded chicken in a creamy, spicy yellow sauce made from yellow chilli, milk, cheese and bread, and popular at house parties.

Gina: “Ají de gallina is a bit tedious to prepare because the chicken is shredded by hand.”

Gina: “lomo saltado, or fried onions, tomatoes, strips of meat, and spices”

Gina:
Lomo saltado consists of fried onions, tomatoes, strips of meat, and spices. It’s usually served with rice and french fries. There are some variations and cheaper options of this home-cooked meal where you can use chicken or canned tuna.

Lucia: [normal] Usualmente las familias compran las papas fritas ya hechas en restaurantes cercanos para agregarle al lomo saltado.
Gina: “Families usually buy ready-made fries in nearby restaurants to add to lomo saltado.”
