Pachamanca is a dish from the highlands of Peru with meat such as lamb, mutton, pork, chicken, or guinea pig marinated in spices. It’s served with potato, sweet potato, sweet tamales, habas, and corn. All of this is baked in a hole in the ground with hot stones for a couple of hours. Nowadays, restaurants have special ground holes made of bricks. |

Peruvian chicken is the most popular Peruvian dish among Peruvians. It’s basically just marinated chicken in Peruvian ingredients baked in hot ashes in an oven where the chicken rotates. It’s served with french fries and salad. The only restaurants specializing in this are called pollería. |
