| Mezcal comes from the word mexcalli and ixcalli from the Nahuatl. And they, and this basically means “oven-cooked agave.” So, the difference between mezcal and tequila comes from that mezcal is 100% ágave, okay? And it is made in a more artisan way than the tequila, okay. |
| So let’s start with five rules of how to drink mezcal. |

| So, the last rule, the 5th rule is that you don’t drink tequila or you don’t combine it with cocktails and… I said tequila, I’m sorry. Okay, what I meant is that you don’t substitute tequila for mezcal or do not put your mezcal in cocktails that are not formed for mezcal. For example, margaritas or palomas. It doesn’t taste well. |

| That’s correct. So they’re more kind of rituals to drink mezcal than tequila. |
| Now, it is important to remember that mezcal comes from Oaxaca, so if you want to taste a really great mezcal, you should go to Oaxaca. The best of the best are made there. It has its origin in Oaxaca. |
| Now, the tequila was named after the same place, Tequila, in the north of Guadalajara. And the tequila has chemicals. It is rather an industrialized process, so it is not made in an artisan way like the mezcal does, so that’s why we can drink it like a, at once, like all straight, whereas the mezcal, you should drink it sip by, sip by sip. |
| Now, how should, should you drink tequila. The first thing that you should remember is that the movies lie, right? So, in the movies, normally what the characters do is that they put some salt between their fingers and then you lick that salt, you drink tequila all at once, hmm, you pass it, you swallow it and then you squeeze the lime in your mouth in order to sweeten the flavor. |
| However, a true Mexican doesn’t do that, no. We don’t really do that. What should they do, what should you do instead, it is much better, better, if you do it in this way. You put some salt on the lime first, you put some salt and I think that’s enough and then, first of all, you squeeze it in your mouth, you have all the juice through your mouth, delicious.
